Almond BISCUITS / PASTE DI MANDORLA

 

Paste di Mandorla, or Almond biscuits, are traditional Sicilian biscuits. Together with Pistachio biscuits, they are a very popular treat served in the cafes of Eastern Sicily where almonds and Pistachios cultivation is widespread on the lava soil near the Etna Volcano.

Perfect as side for an Espresso or a quick snack.

Ingredients: Ground almonds, Caster sugar, Honey, Egg whites, zest of lemon, Icing sugar, Almond flavour

PISTACHIO BISCUITS / PASTE AL PISTACCHIO

Pistachio Biscuits, or Paste al pistacchio, are a typical sweet treat from Sicily. Together with Almond biscuits they are a real must produced from pasticcerie (pastry shops) in Eastern Sicily. If you have ever traveled in the Middle East or in Northern Africa you will find some similarities with some typical desserts of this area of the world.  They are one of the many examples of the heritage left from Arab presence in Sicily.

SESAME AND SAFFRON BISCUITS / BISCOTTI AL SESAMO (REGINELLE)

Sesame and Saffron biscuits are a real classic of Sicilian bakeries. When they come straight from the oven the toasted sesame smell spreads heavenly all over the street. Perfect biscuits to dunk in a glass of milk or your favourite tea.Farina 00 (frumenta)

Ingredients: Wheat flour, sugar, lard, ammonia baking powder, vanilla essence, eggs, saffron, sesame seeds. (Lard can be replaced with butter on request)

FIG AND NUTS BISCUITS / BUCCELLATI

Buccellati are the traditional Christmas treat in Sicily but today they are available all year round. A fragrant Italian style shortcrust pastry filled with a rich mix of figs, nuts, dark chocolate, orange marmalade, coffee.

Ingredients: Wheat flour, eggs, lard, sugar, Marsala wine, dried figs, dark chocolate, chocolates, nuts, almonds, orange zest, coffee. (Lard can be replaced with butter on request)

FRUTTA MARTORANA / MARZIPAN fruit

Martorana fruit is traditional Sicilian Marzipan fruit. It is made with almond flour and sugar. It is the traditional dessert for the Day of the Dead (that in Sicily is a holiday) but today is available all year round. Industrial marzipan is made with a low percentage of almond flour (14%). Sicilianbake Martorana is finest quality, hand painted and has 50% almond flour.
